Thorne & Daughters `Paper Kite` Swartland, South Africa is a captivating White (still) wine, crafted from 100% Semillon Blanc. This dry wine is fermented with indigenous yeasts in old French oak barrels and aged in a mix of French and Austrian oak, then bottled without fining or filtration, reflecting a minimal intervention philosophy. It boasts aromas of soft oatmeal, almond, green fig, and thyme, complemented by notes of yellow plum and a hint of gunflint. The palate is full and rounded with a silky texture, revealing flavours of almond, honeydew melon, white peach, and gooseberry, leading to a rich, energetic finish. This vegan and vegetarian-friendly wine is versatile with poultry or rich fish dishes.

Vinification
Upon arrival at the winery, the Semillon grapes were whole bunch pressed in an old Vaslin press. This ensured an oxidative and very gentle pressing - yielding a very clear juice. The juice was left to settle overnight and was then racked into old, 500-litre French oak barrels for fermentation with indigenous yeasts. No sulphur additions were made until August following the vintage once the wine had time to settle. The wine was aged in a mix of larger new and old small French oak barrels, and some larger Austrian oak barrels. The final blend was bottled without fining or filtration.

This Semillon Blanc offers a complex aromatic profile of soft oatmeal, almond, green fig, thyme, yellow plum, lemongrass, and a hint of gunflint. The palate is full and rounded with a silky texture, revealing notes of almond, honeydew melon, white peach, and gooseberry, culminating in a rich and energetic finish.
