Tablas Creek Patelin de Tablas Rouge from Paso Robles, USA, is a still, dry red wine crafted from a Rhône-style blend of Syrah, Grenache, Mourvèdre, Counoise, and Terret Noir. Fermented with indigenous yeasts in oak and stainless steel, then aged in large upright oak tanks, it presents a Syrah-driven nose with aromas of black olive, liquorice, and spiced blackberry. The palate reveals black raspberry and savoury pancetta flavours, supported by bright acidity and chalky tannins, leading to a long finish with wild herbal notes. This organic, vegan, and vegetarian wine pairs beautifully with beef, lamb, cured meats, and mature cheeses.

Vinification
All varietals were fermented using only indigenous yeasts in a mix of upright oak fermenters and stainless steel tanks. The wine was aged in large upright oak tanks for six months before bottling in July 2023.

Serving recommendation
