Sébastien Vaillant Valençay Valençay AOC from Loire, France, is a certified organic dry White wine, crafted from an unoaked blend of 80% Sauvignon Blanc and 20% Chardonnay. Co-fermented in stainless steel and aged on fine lees, it offers an expressive nose of intense lychee, peach, and apricot. The palate delivers flavours of white peach and ripe pear, balanced by natural acidity and vibrant minerality, with Chardonnay adding a richer texture. This distinctive wine is an ideal accompaniment for pyramid-shaped goat's cheese.

Upon arrival at the winery, the Chardonnay and Sauvignon Blanc grapes were gently crushed with a portion of the must left on skins to macerate before pressing. The varieties were co-fermented in temperature-controlled stainless-steel tanks, for approximately two months. After fermentation, the wine was racked, blended and aged on fine lees for one month before bottling.
This dry white wine offers an expressive nose of intense lychee, peach, and apricot. The palate reveals flavours of white peach and ripe pear, complemented by a natural acidity and vibrant minerality.
Serve chilled at 12-14°C to best enjoy its vibrant fruit and mineral notes.
