Sandeman `Character` Medium Dry Amontillado Jerez-Xérès-Sherry PDO, Jerez, Spain, is a complex Orange Fortified Off-Dry wine crafted from Palomino and Pedro Ximénez grapes. Aged in a Solera system, it undergoes biological ageing under flor yeast before oxidative ageing, developing pronounced yeasty, bready notes alongside rich oxidative nutty and dried fruit characters. The addition of Pedro Ximénez imparts hints of raisins and treacle, creating a smooth, long finish. This versatile sherry pairs wonderfully with cured meats, mature cheeses, or as a sophisticated aperitif. This wine is not certified vegan, vegetarian, or natural.

The Palomino grapes are fermented into a dry base wine before being fortified to around 15% and entering the Solera system. A layer of flor yeast develops on the surface of the wine, protecting it from oxygen and allowing the wine to age biologically. Later, the wine is re-fortified to 17.5% - this extra alcohol kills the flor and the wine becomes exposed to oxygen, allowing it to develop complex notes of dried fruits and roasted nuts. The wine is aged in the solera system for an average of nine years, and is sweetened with a small proportion of Pedro Ximénez wine to add richness and weight.
This complex Orange Fortified wine offers pronounced aromas and flavours of yeasty, bready notes, complemented by oxidative nutty and dried fruit characters. A touch of Pedro Ximénez adds notes of raisins and treacle, leading to a smooth, long finish with lingering roasted nuts.
Serve chilled at 12-14°C. No decanting required for this complex fortified wine.
