San Polo Rubio Toscana I.G.T. from Tuscany, Italy, is a vibrant Red dry still wine crafted from a blend of Sangiovese, Merlot, and Cabernet Franc. The grapes are hand-harvested and fermented in stainless steel, then aged for 10 months in stainless steel tanks followed by four months in bottle. It offers an intense nose of cherry, blackcurrant, and violet with subtle spice, leading to a silky, fruit-driven palate. Certified organic, vegan, and vegetarian, this wine is versatile with pasta dishes or cured meats.

The grapes were hand-harvested during the second half of September. After careful sorting, a gentle pressing took place, followed by cold-soaking to reduce tannin extraction and enhance freshness. Fermentation took place in stainless steel tanks at 28-30°C for between five and six days. After fermentation, the wine was aged in stainless steel tanks for 10 months, followed by a further four months in bottle, before release.
This vibrant red wine offers an intense nose of cherry, blackcurrant, and violet, complemented by subtle spice notes. The palate is beautifully balanced with silky tannins and fruit-driven flavours of cherry and berries, leading to a long, elegant finish.
Serve at 14-16°C; decanting for 30 minutes will enhance its fruit and elegance.
