San Polo Rosso di Montalcino Rosso di Montalcino DOC, Italy, is a vibrant still Red wine crafted from 100% Sangiovese grapes. This dry, medium-bodied wine undergoes fermentation in concrete tanks with 14-16 days of skin maceration, followed by 12 months of ageing in large barrels. It presents a bright ruby colour with inviting aromas of fresh berries, sour cherry, blackberries, and a hint of vanilla. The palate is smooth with finely-balanced tannins, offering a dry, fresh, and sinewy character that leads to a long aromatic finish. Certified organic, vegan, and vegetarian, it pairs beautifully with beef, lamb, pasta, or mature cheeses.

Vinification
The grapes were hand picked and carefully sorted, before being gently pressed and fermented in concrete tanks, with maceration on the skins lasting around 14-16 days at 28-30°C. After malolactic fermentation, the wine was aged for 12 months in lightly-toasted large barrels (2000 L and 4000 L) followed by a month of bottle ageing.
