Quinta dos Carvalhais Dão Encruzado from Dão, Portugal, is a superb still dry white wine crafted from the indigenous Encruzado grape. Partially fermented and aged for eight months in French oak barrels with frequent batonnage, it develops a lovely depth and texture. This elegant wine offers intense aromas of peach, nectarine, jasmine, and orange blossom, with subtle hints of cedar. The palate is crisp and vibrant, showcasing bright peach and floral flavours, beautifully integrated with toasty oak notes, leading to a balanced and persistent finish. This versatile wine is vegan and vegetarian, making it an excellent accompaniment to poultry, lean fish, or mild cheeses.

Vinification

The grapes were hand harvested into small 20kg boxes and unloaded directly into the pneumatic press. After gentle whole-bunch pressing, the must was settled over 24 hours and then transferred to stainless-steel tanks to begin fermentation. Half of the wine proceeded to new French oak barrels of varying sizes (225 litre, 500 litre and 1,000 litre) where it was fermented at 19°C for a period of 20 days. While some of the wine was aged in stainless steel tanks, 70% was aged for around 6 months in different -sized barrels of French oak. During this period, the wine frequently underwent 'batonnage' to increase texture and body on the palate.

Flavour profile

This elegant white wine offers intense aromas of peach, nectarine, jasmine, and orange blossom, complemented by subtle hints of cedar. On the palate, it is crisp and vibrant, showcasing bright peach and floral flavours, beautifully integrated with toasty notes from oak ageing, leading to a balanced and persistent finish.

Serving recommendation

Serve chilled at 12-14°C. A brief aeration will enhance its complexity.
