Quinta dos Carvalhais Dão Branco from Dão, Portugal is a vibrant dry White wine crafted from Encruzado and Gouveio grapes. Thirty percent of the fruit is fermented and aged for four months in French oak barrels, contributing subtle complexity. On the nose, it offers ripe lemon, lime, white stone fruit, and floral hints, complemented by a touch of brioche. The palate is pronounced with crisp acidity, leading to a pleasantly fresh finish. This still wine is vegan and vegetarian, making it a versatile choice. It pairs beautifully with lean fish, poultry, and various appetizers. Vinification

The grapes were hand harvested into 20kg boxes and vinified separately by grape variety and by plot. Upon arrival at the winery, the grapes were destemmed, gently crushed and pressed. Fermentation with indigenous yeasts took place mostly in stainless-steel tanks at 18°C. However, 30% of the fruit was fermented in French oak barrels - a combination of new and used oak and a range of sizes from 225 litres to 500 litres - and then aged in these for four months, before the final blend was assembled, left to marry in bottle.
