Vinification
Harvest took place in September with the Alvarinho picked on the 2nd and the Loureiro on the 3rd. Upon arrival at the winery, the grapes were cooled and destemmed prior to pressing, followed by three days of cold static decanting (with the lees being removed within 24 hours). Fermentation was carried out at controlled temperatures never exceeding 18°C. The wine was aged for eight months in 500 litre barrels and 1,200 and 2,000 litre casks, with weekly stirring. After bottling the wine was aged for a further 12 months prior to release.
