Protero Adelaide Hills Nebbiolo, Adelaide Hills, Australia, is a captivating Red (Rouge) still dry wine crafted from 100% Nebbiolo grapes. This expression is highly perfumed and brooding, revealing deep dark cherry, sweet red berry, and fresh leather aromas, with hints of citrus peel. On the palate, it is vibrant and lively, offering fresh raspberry and plum flavours, surprising umami notes, light citrus, and florals, all supported by fine, firm tannins. Aged in puncheon and large oak vats, this wine offers a long, elegant finish and pairs beautifully with rich, savoury dishes or mature cheeses.

Vinification

Harvest took place on 15th and 16th April, and resulted in 20 tonnes of fruit. Upon arrival at the winery, the grapes were destemmed with 40% left as whole berries. They then underwent a cold soak at 15 degrees for 72 hours before being separated for fermentation with 75% placed in open-top stainless steel tanks, and 25% in old oak. The wine was then gently pressed and settled in tank for six weeks before being sent to puncheon for malolactic fermentation. The wine was then aged for four months in puncheon before being moved to large oak vats for a final 6 months ageing. The wine was bottled mid-September 2022.

This captivating Red Nebbiolo offers a highly perfumed and brooding nose, revealing deep dark cherry, sweet red berry, fresh leather, and faint hints of citrus peel. On the palate, it is vibrant and lively, with flavours of fresh raspberry and plum, flowing into surprising umami notes, and finishing with light citrus and florals, supported by fine, firm tannins.

Serving recommendation

Serve at 16-18°C, decanting for an hour to allow its complex aromas to unfold.
