Protero `Aromatico` from Adelaide Hills, Australia, is a captivating White Still wine. This dry blend of Gewürztraminer, Riesling, and a touch of Sauvignon Blanc is crafted with minimal intervention, blended on its lees and settled in tank to enhance texture. It boasts exotic aromas of lychee, orange blossom, and lemongrass, leading to a beautifully textural palate with refreshing lime and rose water notes, culminating in a grassy finish. This aromatic wine is perfectly suited to complement spicy cuisine, offering a versatile and appealing experience.

Vinification
Aromatico is a blend of Gewürztraminer, Riesling, and Sauvignon Blanc. After hand harvesting on the 23rd of March, the Gewürztraminer was settled as juice and fermented to dryness. The riesling harvested on the 4th of April was gently pressed and blended with the Gewürztraminer, until the Sauvignon Blanc was harvested on the 14th of April. Fermentation began on the 1st of May and lasted eight weeks, leaving some residual sugar. The wine was racked once before bottling took place on the 13th of July.
