Poggiotondo Rosato delle Conchiglie Chianti, Italy, is a vibrant still Rosé crafted from 100% Sangiovese grapes, sourced from plots rich in fossil seashells. This certified organic dry wine offers a fragrant bouquet of violet, red plum, and cherry, with a hint of allspice. Fermented in cement tanks and aged on fine lees without malolactic fermentation, it retains its primary fruit aromatics. The well-balanced palate reveals notes of wet stone, red plum, and strawberry, complemented by refreshing acidity and an elegant finish. It pairs beautifully with poultry, pasta, and mild cheeses, making it a versatile choice for various occasions.

The Sangiovese grapes were harvested by hand and carefully sorted. The whole clusters were gently pressed in a pneumatic press and the juice was naturally settled, followed by a five-day pre-fermentation cold soak at 8°C. The must was racked off the gross lees and fermented in cement tanks at 18°C over a period of 15 days. No malolactic fermentation was allowed to take place. The wine remained on its fine lees for a total of 60 days, and remained in temperature-controlled concrete tanks until bottling to retain vibrant, primary fruit aromatics.
