Plantagenet Lancaster Shiraz from Mount Barker, Great Southern, Australia, is a superb Red still dry wine crafted from hand-harvested Shiraz grapes. Vinification involved cold soaking, cultured yeast fermentation, pumpovers, plunging, and maturation in barrel, followed by nine months in bottle. It offers a lifted nose of blueberry, blackcurrant, cacao, and black pepper. The palate reveals juicy acidity, fine tannins, and concentrated savoury flavours, leading to a long, elegant finish. This versatile wine pairs beautifully with roasted lamb or mature hard cheeses.

Vinification
Fruit sourced from House of Plantagenet's oldest plantings of Shiraz was harvested at night when the fruit was coolest. At the winery the fruit was destemmed and transferred via the chiller (bringing the must temperature down to 6°C) into open top fermenters for cold soaking. After four days, the must was allowed to warm up, and innoculated with a cultured yeast. The ferment was managed with a combination of pumpovers and plunging. Once complete, the wine was pressed to tank and allowed to settle before being finally racked to barrel for maturation. The wine spent a further nine months in bottle prior to release.

This superb Red still dry Shiraz offers a lifted nose of vibrant blueberry, blackcurrant, and hints of cocoa and black pepper. The palate is well-integrated with juicy acidity, fine tannins, and concentrated savoury flavours, leading to a long, elegant finish.
Serving recommendation
Serve at 16-18°C. Decant for an hour to allow its complex flavours to unfold.
