A bold Red wine with intense blackberry and cassis notes, complemented by fine oak tannins
Plantagenet `Aquitaine` Mount Barker Cabernet Sauvignon from Mount Barker, Australia, is a superb Red still dry wine crafted from Cabernet Sauvignon, Shiraz, and Cabernet Franc grapes. The wine was fermented in open and closed top fermenters with careful phenolic extraction, then matured for 17 months in French barriques, 30% new. It offers intense aromas of blackberry, cassis, and olive with subtle nuances of cedar and tobacco. These notes continue on to the full-bodied palate, complemented by fine, supple oak tannins and a firm, lingering finish of cassis and tapenade. Pairs wonderfully with rich red meats and mature cheeses.

Vinification
Separate parcels of machine harvested fruit were destemmed into both open and closed top fermenters without any chilling. Inoculation happened with a cultured yeast strain, with hand plunging and twice daily pump overs conducted during fermentation in order to carefully manage phenolic extraction. The finished wine was left in contact with the skins for a further period in order to increase complexity and weight. The wine was then pressed to tank and racked to French barriques, 30% of which were new, for malolactic fermentation before maturing for 17 months prior to blending, filtration and bottling.
Flavour profile
This full-bodied red wine offers intense aromas of blackberry, blackcurrant, and olive, complemented by subtle hints of cedar and tobacco. On the palate, these flavours persist, supported by fine, supple oak tannins, leading to a firm, lingering finish of blackcurrant and tapenade.
Serving recommendation
Serve at 16-18°C. Decanting for 1-2 hours is recommended to allow the wine to open up.
