Pedro Parra `Imaginador` from Itata Valley, Chile, is a captivating dry red still wine crafted from 100% Cinsault. This wine undergoes 30% whole-bunch fermentation and ages for 12 months in concrete and untoasted foudres, resulting in a pure expression of its granitic terroir. It reveals a vibrant bouquet of red fruits like raspberry and cranberry, intertwined with delicate floral hints of rose and a touch of thyme. On the palate, it offers a refreshing minerality, fine tannins, and a persistent, elegant finish. This versatile wine pairs beautifully with poultry, cured meats, or a variety of vegetarian dishes.
