Montes Outer Limits Zapallar Pinot Noir Zapallar DO, Chile, is a vibrant Red still wine crafted from hand-picked Pinot Noir grapes. This dry wine undergoes cold soaking and controlled fermentation, followed by 10-12 months of ageing in French oak, which imparts subtle notes. It presents a bright ruby red hue with enticing aromas of fresh raspberry, strawberry, and cherry syrup, complemented by hints of damp earth, herbs, and flowers. On the palate, it is light-bodied with rounded tannins and an elegant structure, showcasing concentrated fruit flavours. This vegan and vegetarian-friendly wine offers a versatile pairing for poultry dishes or mild cheeses.

The grapes were hand picked into 10 kilogram trays, destemmed and cold soaked at 8°C for five days to extract aroma and colour, which is especially important for thin-skinned Pinot Noir. The grapes were then fermented for seven days at controlled temperatures of 25°C and kept on their skins to give structure and colour for another 20 days. A small portion was racked from the tank early to ferment without its skins, in order to preserve the fresh fruit character. After malolactic conversion, the wine was aged in a mixture of new and used French oak barrels for 10-12 months.
This vibrant red wine offers an enticing bouquet of fresh red fruits, complemented by subtle earthy and floral undertones. On the palate, it is light-bodied with an elegant structure, showcasing concentrated fruit flavours and rounded tannins for a smooth finish.
Serve at 12-14°C. A short decant can enhance its elegant red fruit character.
