Loimer Extra Brut Reserve from Langenlois, Thermenregion, Austria is a superb White sparkling wine, crafted dry. This organic and biodynamic blend of Zweigelt, Pinot Noir, St Laurent, Chardonnay, Pinot Blanc, and Pinot Grigio undergoes whole bunch pressing and indigenous yeast fermentation, followed by 18 months ageing on lees in bottle. It offers inviting aromas of green apple, lemon cake, brioche, and dried dates. The bone-dry palate is vibrant with citrus peel and toasty notes, animated by subtle minerality and refreshingly crisp acidity. Perfect as an aperitif or with light appetizers, this wine is also vegan and vegetarian friendly.

Vinification
The grapes were hand picked into small 20kg crates between 30th August - 12th September 2017. After whole bunch pressing, the first fermentation was carried out using indigenous yeasts in stainless-steel tanks at 18°C - 20°C, which lasted between two to four weeks. The base wine remained in stainless-steel tanks on full lees for four months, followed by racking and a further four months on fine lees. The wine went through malolactic fermentation to temper the racy acidity. It was then bottled in June 2018 and the second fermentation occurred. Following a minimum of 18 months ageing on lees, the wine was disgorged in December 2019.
