Kaiken Ultra, Mendoza Chardonnay from Argentina is a superb still white wine. This dry Chardonnay, with 35% fermented and aged for 12 months in new French oak barrels and the remainder in concrete tanks, offers a rich and textured experience. It presents a complex bouquet of ripe tropical fruit, notably pineapple and white peach, intertwined with bright citrus notes, vanilla, and a subtle hint of smoke from its oak ageing. The palate is equally rich and complex, beautifully balanced by refreshing acidity, leading to a long, lingering finish. This versatile wine pairs wonderfully with roasted poultry, rich fish dishes, or mature hard cheeses. Certified vegan and vegetarian.

Grapes were hand harvested into small, 10 kilogram boxes and sorted manually at the winery. Alcoholic fermentation lasted for 21 days at temperatures of around 16°C. 65% of the juice was fermented in small concrete tanks to preserve freshness and purity of the fruit. The rest of the juice was fermented in new French oak barrels, where it remained for 12 months. The wine finally spent two months in bottle before release.
This rich and textured Chardonnay offers a complex bouquet of ripe tropical fruits like pineapple and white peach, complemented by bright citrus notes. Oak ageing introduces hints of vanilla and smoke, leading to a palate with beautifully balanced acidity and a long, lingering finish.
Serve chilled at 12-14°C. A short decant may enhance its complex aromas.
