Kaiken Disobedience by Francis Mallmann Red Blend from Mendoza, Argentina, is a testament to the long-standing collaboration between the esteemed winery and the famed Argentinian chef. This still, dry red wine (a robust blend) masterfully combines Malbec, Cabernet Sauvignon, Merlot, and Petit Verdot. It is partially aged in new French oak, with the remainder in used barrels for 15 months, creating a rounded, rich wine. Expect an intense bouquet of blackberries, cherry, and violet, leading to a vibrant, fruit-forward palate with subtle sweet spice and fine-grained tannins, culminating in a persistent, rich finish. This vegan and vegetarian-friendly wine pairs beautifully with beef, lamb, game, or mature and hard cheeses.

The grapes were hand harvested in March and April before being manually sorted at the winery. Pre-fermentation maceration lasted for seven days at 10°C. Fermentation took place for seven days at 26°C in concrete tanks using selected natural yeasts, followed by natural malolactic fermentation. 30% of the wine was aged in French first-use barrels while the remaining 70% was aged in used barrels for 15 months. Finally, the wine was aged in bottle for 6 months before release.
This vibrant red blend offers an intense bouquet of blackberries, cherry, and violet notes. On the palate, it is fruit-forward and full-bodied with fine-grained tannins, complemented by subtle hints of sweet spice from oak ageing, leading to a persistent, rich finish.
Serve at 16-18°C. Decant for an hour before serving to enhance its rich flavours.
