I Ciacca `Nostalgia` Maturano Lazio IGT from Lazio, Italy, is a captivating still white wine crafted from the ancient indigenous Maturano grape, a variety key to its revival in this beautiful, isolated part of southern Lazio. This dry, concentrated, and complex expression is gently pressed and undergoes a long fermentation with indigenous yeasts, followed by nine months on fine lees in concrete tanks and up to two years of bottle ageing. It presents an intense yellow hue, slowly unfurling on the palate with bright acidity and alluring notes of honey and dried oranges. Aromas of freshly peeled pear, dried orange, and a hint of brioche complete the profile. Certified organic, vegan, and vegetarian, it pairs wonderfully with poultry, rich fish, or mild cheeses.

Vinification

Careful and rigorous selection of the grapes in the field followed by a soft pressing of the whole bunches and a cold static settling in temperature controlled stainless steel vats for 3 days. The must was then transferred to concrete tanks. A starter without added yeasts was prepared which was then combined with the must to start a spontaneous fermentation at 18°C that ran slowly for over 30 days. The wine was aged on its fine lees (still in concrete) for at least 9 months and decanted twice before bottling. Finally, it was aged in the bottle for a further 24 months in a natural cave before release.

Flavour profile

This concentrated and complex white wine offers an intense yellow hue. It slowly unfurls on the palate with bright acidity, revealing notes of honey and dried oranges, complemented by aromas of freshly peeled pear and a hint of brioche.

Serving recommendation

Serve at 12-14°C; consider decanting to allow its complex aromas to fully open.
