Sauvignon Blanc

Greywacke Wild Sauvignon from Marlborough, New Zealand, is a distinctive dry White (Sauvignon Blanc) wine crafted from 100% Sauvignon Blanc grapes. This still wine undergoes a unique vinification process, fermented in French oak barriques using indigenous yeasts, with a lengthy fermentation and lees stirring, followed by malolactic fermentation for two-thirds of the wine. The result is a lush and textural wine, offering aromas of rock melon, ginger, lime zest, and toasted coconut. The palate delivers juicy lemon curd and tangelo flavours, balanced by vibrant acidity and chalky oyster shell notes, culminating in a lingering savoury finish. This vegan and vegetarian-friendly wine pairs beautifully with poultry, rich fish, or creamy cheeses.

75.0CL , 13.5% ABV , Vintage: 2023

Vinification

Some vineyards were machine harvested during cool night-time conditions, and others by hand during the day. The grapes were lightly pressed and the juice cold-settled prior to racking into French oak barriques, a small percentage of which were new. The juice underwent spontaneous indigenous yeast fermentation with occasional lees stirring. Approximately two-thirds underwent malolactic fermentation. It was transferred out of oak prior to the following harvest and left on lees for a further six months. Bottling took place in September 2024.

Flavour profile

This alternative Sauvignon Blanc offers a complex aromatic profile of nectarine, ginger, lime zest, and toasted coconut. The palate is lush and textural, featuring juicy lemon curd and tangelo flavours, balanced by vibrant acidity and chalky oyster shell notes, leading to a lingering savoury finish.
