Great Heart Stellenbosch Cabernet Sauvignon Stellenbosch W.O., South Africa, is a concentrated Red, Dry still wine crafted from hand-harvested Cabernet Sauvignon grapes. Fermented with indigenous yeasts and aged for 11 months in French oak barrels, it offers a perfumed bouquet of blackcurrant, cranberry, and cocoa with mineral graphite notes. The palate is broad and layered, showcasing dark plum and pomegranate, supported by silky tannins and a structured, long finish. This vegan and vegetarian-friendly wine pairs beautifully with roasted meats or mature hard cheeses.

Vinification
The grapes were harvested by hand. On arrival at the winery, they were sorted, destemmed and crushed into tanks. Minimal SO2 was added no further additions were made Prior to fermentation, manual punch downs were carried out once a day for the first four days. After this, fermentation began with indigenous yeasts and the cap was kept moist with one or two gentle manual punch downs per day. Fermentation lasted about a week, after which maceration was carried out for three to seven weeks depending on the development of each tank. The wine was then transferred to barrel for malolactic fermentation and aged for 11 months in 225 and 500 litre French oak barrels (10% new).
Flavour profile
This concentrated yet perfumed Red wine offers a complex bouquet of blackcurrant, cranberry, and cocoa, underpinned by mineral notes of graphite. The palate is broad and layered, revealing dark plum and pomegranate, complemented by silky tannins and a structured, long finish.
Serving recommendation
Serve at 16-18°C. Decant for an hour to allow it to open up fully.
