Domaine Soupé Chablis France is a vibrant White, Still, Dry wine crafted from 28-31 year old Chardonnay vines, reflecting three generations of vineyard ownership. Winemaker Frédéric Soupé uses indigenous yeasts and temperature-controlled, stainless-steel fermentation, followed by six months on fine lees in stainless steel to enhance texture and purity. This meticulous process results in a wine displaying lively notes of citrus and stone fruit, bright acidity, and a distinctive saline finish. Its elegant profile and rich texture make it a versatile partner for a range of dishes, from fresh seafood to delicate poultry.

Vinification
Upon arrival at the winery, the grapes were gently pressed in a pneumatic press, and the juice was allowed to settle. Alcoholic fermentation with indigenous yeasts took place in stainless-steel vats at a constant temperature and malolactic fermentation occurred naturally. To add texture to the palate, the wine was aged on fine lees in stainless steel vats before being lightly filtered and bottled.

This Chablis offers a fine and complex nose, bursting with lively citrus and stone fruit aromas. On the palate, a bright acidity beautifully balances the rich texture derived from lees ageing, leading to a refreshing, slightly saline finish.
