Domaine Joël Delaunay, `Les Cabotines` Touraine AOC, France, presents a still, dry Rosé crafted from a blend of 70% Gamay and 30% Pineau d’Aunis. The grapes undergo a short, cold maceration and fermentation in temperature-controlled stainless-steel tanks, followed by ageing on fine lees. This results in a wine with attractive scents of red berries and floral notes, leading to a lively palate where the fruit is enhanced by a touch of pepper, balanced by racy acidity and a silky texture. It pairs wonderfully with light appetizers, poultry, or lean fish.

The grapes were pressed in a pneumatic press with careful selection of the resulting juices to control the colour. Alcoholic fermentation took place over 20 days at a temperature of 14°C. After fermentation, the wine was aged on its fine lees prior to cross flow filtration and bottling.
This vibrant rosé offers attractive scents of red berries and floral notes, leading to a lively palate where the same fruit is enhanced by a touch of pepper. It boasts a silky texture and a racy acidity, making it an enjoyable and refreshing wine.
