Domaine Joël Delaunay `Casca Macération de Soif` from Touraine AOC, France, is a pioneering still Orange wine crafted from 100% Sauvignon Blanc. This dry wine undergoes a 15-day skin maceration and fermentation on skins, followed by 3-12 months ageing on fine lees, creating a uniquely aromatic and textured experience. It reveals enticing aromas of dried mandarin zest, honey, and almonds, leading to a palate clean and fragrant with orange peel and honeysuckle notes, supported by a grippy texture and elegant minerality. This complex wine pairs beautifully with poultry, cured meats, and mature cheeses.

The ripe Sauvignon Blanc grapes underwent a 15-day maceration on the skins in stainless-steel tanks, in order to extract the aromas, flavours and delicate tannins that are typical of this wine. The must was then fermented on its skins without temperature control and very few pump overs. Following racking, the wine was aged for between 3 and 12 months on its fine lees, with no lees stirring.

Serve chilled at 10-12°C. Decant for 30 minutes to allow its unique aromatics to unfold.
