Dandelion Vineyards 'Honeypot of the Barossa' Roussanne from Barossa Valley, Australia, is a beautifully fresh and dry still white wine crafted from 100% Roussanne grapes. Whole bunches were hand-picked and cool fermented in stainless steel tanks, then rested on fine lees for three months to retain fresh aromatics. It offers striking aromas of beeswax, mandarin zest, rosemary flowers, and green apple, with hints of oyster shell. The palate is crisp and fresh, showcasing vibrant acidity that perfectly balances Roussanne's inherent richness and texture, leading to a long, refreshing finish. This versatile wine is ideal for pairing with poultry or rich fish.

Vinification

Whole bunches of Roussanne were picked by hand in the cool, early morning. After gentle crushing the free run juice was cool fermented in stainless steel tanks to retain fresh aromatics in the wine. The wine sat on fine lees for three months without bâtonnage and then was racked and bottled.
