Dalia `Kos` Merlot from the Negotin Valley, Serbia, is a vibrant Red still, dry wine crafted from 100% Merlot grapes. This natural, vegan, and vegetarian-friendly wine undergoes 30% whole bunch fermentation with indigenous yeasts, followed by 10 months of ageing in Serbian acacia and French oak barrels. It offers lively aromas of red fruits, dark cherries, and hints of spice, leading to a well-structured palate with vivid tannins and a subtle chocolate finish. This expressive Merlot pairs beautifully with roasted meats, rich pasta dishes, and mature cheeses, making it a versatile choice for any occasion.

Vinification
The grapes were handpicked, allowing for careful selection in the vineyard. Upon arrival at the winery, most of the grapes were destemmed and macerated for three weeks, 30% whole bunch, to enhance the red fruit aromatics. Fermentation took place in open top stainless-steel tanks with indigenous yeasts. The wine was then aged in old Serbian acacia 500 litre tonneau and French 225 litres oak barrels for 10 months prior to bottling without fining or filtration.

Serving recommendation
Serve at 16-18°C. Decant for 30 minutes to an hour to allow it to open up.
