Vinification
Upon arrival at the winery, the hand-picked grapes were crushed and destemmed before undergoing a three-day maceration period in the roto-fermenter, at controlled temperatures of 25-27° C. Alcoholic and malolactic fermentation took place in stainless-steel vats, after which the wine spent three weeks in temperature-controlled tanks at 2-3°C to undergo tartaric stabilisation. Maturation then took place in tank followed by a further ageing period in bottle prior to release.
