Clonakilla `Hilltops` Shiraz from Hilltops, Australia, is a superb still Red wine. This dry Shiraz, crafted from destemmed grapes fermented warm and aged for 11 months in Allier oak barriques (15% new), offers lifted aromas of red berries, cracked pepper, and spice. The palate reveals ripe, dark fruit flavours with a deep, concentrated cherry and blackberry character, supported by fine-grained tannins and racy acidity. Forward, accessible, and superbly balanced, it is a fantastic introduction to one of Australia’s most cherished wineries. This vegan and vegetarian-friendly wine pairs wonderfully with roasted red meats or mature cheeses.

Vinification
The grapes were destemmed and fermented warm in open-top fermenters of various sizes. No whole bunches. The wine was aged for 11 months in Allier oak barriques and puncheons, 15% new, with the remaining barrels varying from 2-5 years old.
