Cleto Chiarli Vecchia Modena Lambrusco Sorbara from Emilia-Romagna, Italy, is a captivating Rosé sparkling wine. Made from Sorbara grapes, it undergoes light maceration and slow fermentation, then ages on its lees for almost three months, developing a fine and persistent mousse. This wine presents vivid notes of strawberry, blackberry, and wild berries on the nose, complemented by a fresh, mineral palate with intense fruit flavours and a lively acidity. Its dry, effervescent character makes it an excellent aperitif or a versatile companion for light appetizers and poultry dishes.

Vinification
Upon arrival at the winery, the grapes were hand sorted, crushed, and destemmed. The fresh must was cooled to 0°C to prevent natural fermentation. After filtration the cool must was transferred to temperature controlled stainless steel tanks for the initial fermentation. Selected yeasts are then added and the temperature is raised slightly and a cool fermentation is carried out under pressure to incorporate the CO2. After 30 days the wine is stabilized and fined once more prior to bottling.
