Château Fleur de Lisse `Bien-Aimée` de Fleur de Lisse from Saint-Émilion, France, is a certified organic Red still dry wine crafted entirely from Merlot grapes. Aged for 16 months in French oak barrels, it offers enticing aromas of plums and red cherries, subtly intertwined with hints of toast and spice. The palate is sleek with velvety tannins and a vibrant acidity, revealing crunchy fruit flavours and juicy black plums that lead to a lingering finish. This approachable wine pairs beautifully with roasted lamb, rich pasta dishes, or mature cheeses.

Vinification

Upon arrival at the winery, the hand-harvested grapes went through a double sorting process: first by bunch, then (after destemming) by individual berry to ensure that only fruit in pristine condition made it into the wine. Fermentation with indigenous yeasts took place in stainless-steel tanks at controlled temperatures of 28-30°C. Following fermentation, the wine was aged for 16 months in second and third use French oak barrels before the final blend was assembled and bottled.

This deep ruby red wine offers an inviting bouquet of plums and red cherries, subtly enhanced by hints of toast and spice. On the palate, it is sleek and approachable, featuring velvety tannins and a vibrant acidity that carries crunchy fruit flavours, culminating in a lingering, fresh finish.

Serving recommendation

Serve at 16-18°C. Decant for 30 minutes to an hour to allow its rich fruit to open up.
