Château du Coing de St. Fiacre Muscadet Sèvre et Maine Sur Lie, Muscadet Sèvre et Maine AOC, France, is a still, dry white wine crafted from Melon de Bourgogne grapes. Fermented with indigenous yeasts and matured on its lees for eight months, this wine offers a distinctive textured and fragrant style. The nose reveals aromas of green apple and white peaches, leading to a full-bodied palate balanced with concentrated flavours of citrus fruit, white flowers, and apricot, complemented by crisp acidity and gentle minerality. The lees ageing imparts a lovely textural richness. This vegan and vegetarian-friendly wine is perfect with lean fish or shellfish.

The grapes were gently pressed using a pneumatic press. Fermentation took place in underground stainless steel tanks at 20°C over two to three weeks. After fermentation, the wine was matured on lees for eight months in tank before bottling. The bottling of 'Sur Lie' wines cannot legally start until after the first Thursday in the March following the vintage.
This full-bodied dry white wine offers a harmonious balance of concentrated citrus fruit, white flowers, and apricot, complemented by crisp acidity and gentle minerality. Aromas of green apple and white peaches enhance its distinctive textural richness from lees ageing.
