Celler del Roure `Parotet` Valencia, Spain is a certified organic, vegan and vegetarian still red wine. This dry blend of Mandó and Arcos grapes is crafted with indigenous yeasts and aged for 10 months in 2,600 litre clay amphorae, with 30% whole bunch fermentation, showcasing a distinctive freshness. It offers pure, fresh, and elegant dark-fruit flavours, complemented by floral notes, peppery spice, and a beautiful minerality, with a bit more weight and intensity. This vibrant wine pairs wonderfully with roasted lamb, mature cheeses, or hearty beef dishes.

Vinification
The grapes were hand picked into 15kg crates and partially destemmed before fermentation took place in stainless steel, using indigenous yeasts. 30% of the grapes remained as whole clusters and maceration took place over 14 days. The wine was aged for 10 months in 2,600 litre clay amphorae before being released.
