Celler del Roure `Les Prunes` Valencia, Spain, is a beautifully delicate, dry Rosé wine crafted from 100% Mandó grapes. This certified organic and vegan-friendly still wine undergoes direct pressing and spontaneous fermentation, then ages for six months in subterranean amphorae with indigenous yeasts, resulting in a bone-dry profile with crisp acidity and vibrant fresh berry flavours, reminiscent of not-quite-ripe wild plums. It pairs wonderfully with light appetizers or poultry dishes.

How to serve?
Serve chilled at 8-10°C to best enjoy its crisp acidity and fresh berry notes.
Winemaking
The grapes were hand picked, destemmed and then pressed directly into stainless steel tanks for fermentation with indigenous yeasts. Fermentation was completed in 2,800 litre subterranean amphorae, and the wine was aged here for 6 months before being released. The reference to `Blanc de Mandó` on the label refers to the fact this wine is produced as if it is a white wine, with no maceration taking place.
