Causse du Théron `Terrasse`, from Cahors, France, is a vibrant Red still dry wine crafted entirely from Malbec grapes. The vinification process involves machine harvesting, careful sorting, and fermentation in temperature-controlled stainless-steel tanks with ambient yeasts, followed by 18 months of ageing in cement tanks to mellow. This vegan and vegetarian-friendly wine offers ripe kirsch aromas with hints of candied fruit, leading to a palate of fresh acidity, delicate tannins, and ripe blueberry flavours, culminating in a long, perfumed finish. It pairs wonderfully with roasted meats or mature cheeses.

The grapes were machine harvested. After careful sorting at the winery, fermentation took place in temperature-controlled, stainless-steel tanks using ambient yeasts. The wine spent between 15-21 days on its skins with gentle pump overs to aid extraction. The wine then aged for 18 months in cement tanks to allow it to mellow. The wine was lightly filtered prior to bottling, however, no fining took place.
This vibrant Red Malbec from Cahors offers ripe kirsch aromas and hints of candied fruit on the nose. The palate reveals fresh acidity, delicate tannins, and ripe blueberry flavours, leading to a long, perfumed finish.
Serve at 16-18°C; decanting for 30 minutes will enhance its rich fruit profile.
