Casa Castillo `La Tendida` Jumilla DOP, Spain is a captivating Red still dry wine crafted from Monastrell and Garnacha grapes. Fermented with indigenous yeasts in concrete and stainless steel, then aged in foudres and French oak, it reveals distinct red cherry and raspberry notes, wild herbs, and a spicy nuance. The palate is smooth and ripe with subtle minerality, leading to a long finish. This certified organic, vegan, and vegetarian wine pairs beautifully with roasted meats or mature cheeses.

The grapes were handpicked and partially destemmed with 30% remaining whole bunch. Fermentation took place using indigenous yeasts in underground stone lagares at controlled temperatures between 30° to 32° C. The wine was then transferred to oak foudres for malolactic fermentation and aged for 14 months in 5000L foudres and nuetral, 500L French oak demi-muids prior to bottling. No fining or filtration took place.
This captivating Red wine, a blend of Monastrell and Garnacha, offers a distinguished aromatic profile of red cherry, raspberry, wild herbs, and subtle spice. On the palate, it is smooth and ripe, balanced by a delicate minerality that leads to a long, satisfying finish.
Serve at 16-18°C. Decant for 30-60 minutes to allow its complex aromas to unfold.
