Blank Canvas Holdaway Vineyard Sauvignon Blanc from Marlborough, New Zealand is a vibrant dry white wine crafted from Sauvignon Blanc grapes. Machine harvested at night to preserve acidity, the juice is gently pressed and fermented in stainless steel, then left on light lees to enhance textural complexity. This wine offers focused and explosive aromas of guava and passionfruit with a subtle hint of oyster shell, leading to an elegantly balanced and distinctly salty palate. Its refreshing character makes it a versatile choice, perfect with lean fish, shellfish, or a variety of appetizers. This wine is also suitable for vegans and vegetarians.

Vinification
Grapes were machine harvested in the cool of the night to ensure no harsh phenolics were extracted and acidity was preserved. Upon arrival at the winery, the grapes were crushed and gently pressed in a pneumatic press to avoid skin contact, and the juice transferred directly into stainless steel. The must was settled naturally and fermented at cool temperatures. Post-fermentation the wine was left on light lees to increase textural complexity. It was gently crossflow filtered prior to bottling.
