Axel Pauly `Helden` Mosel, Germany is a sophisticated and elegant dry White (still) wine crafted from 80-year-old Riesling vines on the steep, slate-rich slopes of Lieserer Niederberg-Helden. Hand-picked grapes undergo wild yeast fermentation in stainless steel, followed by six months aging on full lees in large barrels with bâtonnage, preserving the vineyard's character. It displays attractive aromas of ripe apple and wild pear, leading to a palate of wonderful concentration, refreshing acidity, and a long, precise mineral finish. This versatile wine pairs beautifully with poultry, lean fish, or spicy dishes.

Vinification
The grapes were hand picked and sorted before they underwent a cold soak for a period of 24-48 hours. Gentle pressing followed before fermentation with wild yeasts in stainless-steel tanks, with no malolactic fermentation. The wine was aged in large barrels on full lees for a period of six months with weekly bâtonnage.
