Alpha Zeta Valpolicella Valpantena Valpolicella DOC, Italy, is a still, dry red wine crafted from Corvina, Rondinella, and Corvinone grapes. A third of the blend undergoes whole bunch fermentation, a rare method enhancing the Corvina's fresh, complex aromatics. Post-fermentation, a third ages in French barriques for under a year. This wine offers an expressive and complex aromatic profile with notable freshness, leading to a palate of complex intensity, fine tannins, and typical Valpolicella freshness. It is a versatile choice, pairing wonderfully with pasta dishes or mature cheeses. This wine is also suitable for vegans and vegetarians.

Vinification
The grapes from the selected sites are vinified separately in small batches. Around one third of the blend undergoes whole bunch fermentation, incorporating stems (raspi) – a method rarely used in traditional Valpolicella winemaking. This approach allows the Corvina to express a fresher and more complex aromatic range. After fermentation, one third of the wine is aged in French barriques, either new or second-use, for just under a year. The final blend is then bottled and aged for an additional three months before release.
