A Mano Primitivo di Puglia, Italy, is a vibrant Red still wine, crafted dry from 100% Primitivo grapes. Winemaker Mark Shannon employs a unique vinification method, including a cold must reintroduction technique and aging in underground cement tanks, to preserve its intense fruitiness and freshness. It offers exuberant aromas of red and black fruits like plum and raspberry, intertwined with Mediterranean spices. On the palate, it is youthful and full-bodied, presenting a beautiful balance of ripe, rounded fruit characters and smooth tannins. This versatile wine pairs wonderfully with hearty pasta dishes, roasted meats, or mature cheeses. It is also suitable for vegans and vegetarians.

Vinification
The Primitivo grapes were fermented for 36 hours without intervention before the free run juice was drawn off and chilled down to 12°C. The cold must was then reintroduced to the warm cap and thoroughly mixed. This complex step was carried to allow the cells in the grape skins to break down from the heat of fermentation and provide colour without alcohol extracting harsh tannins. The reintroduction of the cold must also provides the intense fruitiness of a cold fermentation. After racking, the wine remained in an underground cement tank at a controlled cool temperature until bottling to preserve freshness.
Flavour profile
This Primitivo offers an exuberant nose of intense red and black fruits, notably plum and raspberry, complemented by Mediterranean spices. On the palate, it is youthful and full-bodied, showcasing a harmonious balance of ripe, rounded fruit characters and smooth tannins.
Serving recommendation
Serve at 14-16°C; decant for 30 minutes to enhance its fruit and spice notes.
