TYDY `The Holy Snail` Sauvignon Blanc Val de Loire IGP from the Loire Valley, France, is a vibrant still white wine with a semi-dry profile. Crafted from 100% Sauvignon Blanc grapes, this wine is fermented in temperature-controlled stainless-steel tanks and matured on its fine lees, ensuring no oak influence and preserving its bright aromatics. It presents an expressive nose of grapefruit, fresh lime, and tropical fruit, complemented by fragrant gooseberry and pear. The palate is round, fleshy, and crisp, beautifully framed by a delicate sweetness. This balanced and youthful wine pairs wonderfully with lean fish, shellfish, goat cheese, and poultry.

Vinification

Upon arrival at the winery, the grapes were gently pressed. Fermentation took place in temperature-controlled stainless-steel tanks at 16°C to retain the bright aromatics of the Sauvignon. Following fermentation, the wine was matured on its fine lees for a brief period to add texture to the palate, before being fined, filtered and bottled in early spring.
