Poggiotondo Vermentino delle Conchiglie from Chianti, Italy, is a certified organic still White wine. This dry Vermentino is crafted using cement tanks and untoasted oak casks, with 20% whole bunches fermented in cement to preserve its fruit and vitality. It offers delicate floral notes, golden apple, ripe white peach, and tropical fruit aromas. The palate reveals a lovely mineral character with refreshing acidity, a medium body, and a silky, persistent finish. This versatile wine pairs beautifully with lean fish, shellfish, and light pasta dishes.

The Vermentino grapes were harvested by hand and carefully sorted. Whole clusters were gently pressed in a pneumatic press and the juice was allowed to naturally settle, followed by a two-day cold soak at 8°C. The must was racked off the gross lees and fermented in cement tanks with 20% whole bunches at 18°C, over a period of 20 days. No malolactic fermentation was allowed to take place. The wine remained on its fine lees for a total of 60 days and remained in temperature-controlled concrete tanks until bottling.
This organic Vermentino offers delicate white and yellow floral notes, alongside aromas of golden apple, ripe white peach, and subtle tropical fruit. On the palate, it presents a lovely mineral character with refreshing acidity, a medium body, and a silky, persistent finish.
Serve chilled at 10-12°C. Best enjoyed fresh, no decanting needed.
