Mandrarossa Fiano from Sicily, Italy, is a vibrant still White (bianco) wine, crafted dry from the Fiano grape. This elegant wine undergoes a meticulous vinification process, including skin contact and fermentation in temperature-controlled stainless-steel tanks, preserving its fresh character. It offers fragrant aromas of jasmine, grapefruit, tomato leaf, and a hint of basil, leading to a fresh, mineral palate with notes of oregano and mint. Its excellent length makes it a versatile choice, pairing beautifully with lean fish, shellfish, poultry, or vegetarian dishes.

The grapes were crushed and destemmed, then immediately cooled to 5-8°C, and kept at these temperatures for 4-6 hours on the skins to extract the maximum amount of flavour. They were then softly pressed and the juice was clarified for 36 hours at a low temperature. Fermentation took place over the course of 15-20 days in temperature-controlled, stainless-steel tanks at 16-18°C. The wine was kept in stainless-steel tanks for four months before bottling.
This vibrant white wine offers a fresh and fragrant aromatic experience, showcasing notes of jasmine, grapefruit, and a hint of tomato leaf. The palate is equally fresh and mineral-driven, with subtle herbal undertones of oregano and mint, culminating in excellent length.
Serve chilled at 10-12°C. Enjoy young for its freshness.
