The grapes are harvested early and undergo a long, low-temperature pressing, followed by fermentation and ageing in stainless steel to preserve its vibrant, fresh character. Vinification
The grapes were harvested early in the morning to preserve freshness. As Viognier grapes have a thick skin that impede the extraction of their aromatic palate, a long pressing at low temperatures was carried out. The must was then fermented at low temperatures and aged in stainless steel vats to preserve its vibrant and fresh character.
