Jean-Marc Burgaud `Côte du Py` Morgon, France, is a still red (Beaujolais) wine crafted from 100% Gamay grapes. This dry wine undergoes whole bunch fermentation with 12-15 days of maceration, then ages in concrete to preserve its purity. It offers intense aromas of fresh red cherry and plum fruit with hints of cracked pink peppercorn. The palate is rich and deeply concentrated, balanced by finely-tuned tannins and bright acidity, leading to a slightly spicy finish. A versatile choice, it pairs beautifully with poultry, pork, or mild cheeses. This wine is not certified natural, vegan, or vegetarian.

Maceration during fermentation lasted 12-15 days, with daily pumping over. All the grapes were fermented as whole bunches which Jean-Marc refers to as 'sémi macération carbonique'. Following fermentation, this wine was aged in concrete until bottling. The juice is fermented between 23 to 28°C, with only one pump over per day. Pre-fermentation maceration completely avoided.
