Fog Mountain Merlot from North Coast, USA is a delightful Red still dry wine, crafted primarily from Merlot grapes. This wine undergoes fermentation in stainless steel tanks, with a small portion aged in neutral French oak barrels for 12-14 months to soften tannins and add a hint of spice. It offers inviting aromas of baked plums, delicate floral notes, and black cherry, leading to a palate of dark cherries, strawberry, baking spices, and earthy undertones, all framed by soft, round tannins. This medium-bodied wine is a versatile choice, pairing beautifully with roasted lamb, beef dishes, or mature cheeses. It is also suitable for vegetarians.

The grapes underwent a 48-hour cold soak. Fermentation took place in stainless steel tanks followed by 10-15 days on skins, which resulted in further structure and tannins. The wine was predominantly aged in stainless steel tanks to preserve the fresh, primary fruit aromas. Around 5% was aged in neutral French oak barrels for 12-14 months before bottling, to round out the tannins.
This Merlot offers a delightful bouquet of baked plums, delicate floral notes, and black cherry, complemented by a hint of spice. On the palate, expect dark cherry and strawberry flavours, intertwined with baking spices and earthy undertones, all supported by soft, round tannins.
Serve at 16-18°C, ideally decanted for an hour to enhance its aromatic complexity.
