Finca Sandoval `Fundamentalista` from Manchuela, Spain, is a captivating organic red wine. This dry, still field blend, centred around 50% Bobal co-fermented with at least four other varieties, showcases an innovative approach to winemaking. Eschewing oak, it is matured in 1,000-litre amphorae and concrete, preserving its vibrant character. The palate is aromatic and expressive, bursting with wild red fruit, black cherry, and raspberry, complemented by intriguing notes of dried herbs, black olive, and a hint of earth. Juicy and fresh with a fine texture and smooth tannins, it offers complexity and a delightful drinking experience. This versatile wine pairs beautifully with a range of dishes, from roasted poultry to mature cheeses.

The hand-picked grapes were placed directly into stainless-steel tanks on arrival into the winery, with each variety vinified separately. The grapes were fermented using indigenous yeasts in 100% whole bunches, adding an aromatic lift. Once fermentation begins, there are pump overs twice a day until the desired density is reached. Two pressing cycles are then carried out, separating quality, before final blending. No oak is used, with the 1,000-litre amphorae contributing to an aromatic and expressive palate. The wine was then matured in concrete for eight months.

Serve at 14-16°C. Decant for 30 minutes to enhance its aromatic profile and smooth tannins.
