Fantini `Calalenta` Pecorino Terre di Chieti, Italy, is a delightful dry white wine. This still wine, crafted from Pecorino grapes, offers delightful aromas of white stone fruit and pears, with subtle hints of balsamic. The vinification process involved fermentation in both stainless-steel tanks and 40-hectolitre oak barrels, contributing to its excellent intensity and concentration. On the palate, it presents a wonderfully balanced, round body with a soft texture and vibrant freshness on the finish. This versatile wine pairs beautifully with a wide range of dishes, from light appetizers to poultry and lean fish.

Upon arrival at the winery the grapes were destemmed and gently crushed. Cooling was carried out in only a few seconds down to -1°C in an inert atmosphere. Static clarification of the must took place, followed by fermentation at 12°C in order to preserve the character of the fruit. Majority of the juice was fermented in stainless-steel tanks, while the remainder was fermented in 40-hectolitre oak barrels.
This Pecorino offers a wonderfully balanced experience, showcasing delightful aromas of white stone fruit and pears with subtle balsamic hints. On the palate, it delivers excellent intensity and concentration, a round body, soft texture, and a vibrant, fresh finish.
Serve chilled at 10-12°C to best enjoy its vibrant freshness and fruit character.
