Domaine Cauhapé `Symphonie de Novembre` Jurançon, France, is a delightful White dessert wine, exquisitely sweet and crafted from 100% Petit Manseng grapes. The grapes undergo 'passerillage', remaining on the vine until November to concentrate their sugars, then hand-harvested and pressed into barriques. Fermentation and 12 months of ageing in French oak barrels contribute to its complexity. It offers a smooth, aromatic palate with ripe fruit flavours, notes of pineapple, quince, and chestnut, beautifully balanced by Petit Manseng’s naturally high acidity. Aromas of honey, tropical fruits, and cherry blossom entice the senses. This decadent wine pairs wonderfully with mature and hard cheeses or rich appetizers.

Petit Manseng grapes were hand harvested in small volume crates in mid-November. They were whole bunch pressed into 225 litre barriques, followed by fermentation in one and two-year-old barrels. The wine was then aged for 12 months in French oak barrels.
This sweet White dessert wine offers a smooth and aromatic palate, brimming with decadent honeyed tropical fruits and ripe stone fruit flavours. Beautifully balanced by Petit Manseng’s naturally high acidity, it presents a complex and delicate experience with delightful spice notes.
Serve chilled at 10-12°C to best enjoy its sweet, aromatic profile. No decanting required.
