On arrival at the winery, the grapes were destemmed and crushed. The grapes are macerated on the skins to extract aroma and flavour compounds and to add body to the wine. Fermentation takes places in temperature controlled (17°C) stainless steel tanks for around 12 days. Racking is then carried out with the fine lees to add texture and weight to the wine.
